Full-bodied wine with buttery, peachy aromas and a spicy, ginger-and-white-pepper flavour on the palate. All vineyards are farmed organically with great emphasis on the overall health of the vines and working with reduced yields. A blend of Sauvignon, Semillon and Muscadelle the wine-maker Luc de Conti believes in leaving the wine in contact with the lees (dead yeast cells left over after fermentation) to extract greater flavour. This process is called batonnage (literally stirring the lees with a stick). He is also a great adherent of organic practices in the vineyard, minimal use of sulphur and no filtration.
