The grapes were hand harvested and gently de-stemmed before undergoing fermentation by naturally occurring wild vineyard yeasts. An elegant style of Pinot Noir – it is fresh, layered and textured. The nose reveals lifted aromas of violets, intermingled with spices and smoky undertones. The silky palate is well structured and framed by firm acidity, showing rich dark fruit with interlaced exotic spice.

Pinot Noir makes a noticeably pale wine, but has intense perfume and flavour. When young, aromas range from freshly crushed raspberries or strawberries to plum jam. With age, Pinot Noir often shows violets, game or truffles.
