Whispering Angel is one of the most iconic of the new “star” rosé wines from the south of France. It is produced by Caves d’Esclans which was established in 2006 when Bordeaux-born Sacha Lichine bought the Château d’Esclans. Patrick Léon, the former winemaker at Mouton Rothschild, oversees production. Grenache, Cinsault, Syrah, Vermentino (Rolle) and Carignan grapes come from several top vineyards in the region of La Motte en Provence, with classic chalky-clay soils and southerly exposure. To avoid picking in the hottest part of the day, harvesting only took place between sunrise and noon. The grapes were sorted three times, both electronically and manually, before de-stemming and a light crushing at 7-8ºC. The free-run and direct-pressed juice fractions were both vinified in temperature-controlled stainless steel vats, and there was twice-weekly batonnage before bottling in the December following the harvest. The palest of pale pinks, this delicate and shimmering rosé offers a core of pretty stone fruit with some herbal notes. The palate is dry but smooth-textured, with an appetising mineral finish. An irresistible rosé for those balmy evenings on the terrace or in the garden.

Producing Rosé

Rosé wine is made from red grapes and grape skins are allowed to ferment with the juice for only a brief time. Then the pink-tinted juice is drained, or bled off from the skins and the resulting colour ranges from pale pink to a deeper shade of salmon according to taste and market desire.
